Good Eats: Weekly Meal Plan {4/22/18}

The Plan

Each Sunday, I’ll use Playdates and Prosecco to record our dinner plans for the week, including anything made during Sunday prep. I’ll link any relevant recipes and include some of my favorite products/staples in case you want to use ’em!

It seems like each week I’m like “this is a crazy week– let’s keep it simple!”… and I’ve realized that maybe I just like to keep it simple?! No shame in simple meal-plan game anymore. Our week is crazy, just like every other week. We’ve got traveling and play dates and gymnastics and oh yeah, LIFE.

Here’s what we’re working with:

The Meals


Bacon: life-changing prep. Okay, maybe that’s extreme. Let’s call it “LUNCH-changing” prep. Using it to top salads, make quesadillas for lunches, eggs and breakfast tacos for breakfast, an whatever else I can think of to throw it in. Head a few weeks back to see how I prepare it quick and easy!

5 Ingredient Easy French Bread: another week, another loaf of bread to try! I haven’t tried french bread in a while, so this one will be fun! I’m stoked to use this one with our BLTs later in the week.

Peanut Butter Chocolate Covered Dates: ummm… YES. All the clapping emojis on this one. I’ve been looking for a treat to make using dates that required minimal actual prep/work time. This one has me drooling like crazy. {this recipe is also where I borrowed that incredible cover photo from, so check her out!}


This week we’re having:

  • BLTs on homemade bread
  • Honey Garlic Butter Salmon with Asian side salad
  • Breakfast for Dinner- Veggie Omelet: I’ll use some of the broccoli, onion, and spinach from the veggie chicken casserole, plus my pre-prepped bacon to make a delicious omelet one night.
  • Veggie Chicken Casserole: specifically excited about this one because I know I can have it once the night I make it and then again later in the week for leftovers! When it’s a solo-parenting week, leftovers are key! Plus, this sounds like yummy, healthy comfort food.
